When he says 15 to 20 grams of whey protein, does that mean 15 to 20 grams of the whey protein mix, or 15 to 20 grams of protein in the whey protein mix?

Andrew, I don't know where you heard that you should only drink water 30-45 minutes after a workout. As far as I know, you should consume some carbohydrates within that time. Fruit is a good choice. As far as protein goes, if you are lactose intolerant, you can take a soy protein supplement. You are right that protein is important for muscle recovery.

I've heard a theory that you should only drink water for anout 30-45mins after a workout because your kidneys are working overhaul and you don't want to give them anything else to filter. NOt sure if I entirely agree, I like the idea of fruit because it gives you some sugars, potassium...etc. Personally I wouldn't do Whey protein but that's just me, I'm lactose intolerant, I always eat some form of protein though to help repair muscle tissue.
